VEGAN ALFREDO

INGREDIENTS:
1 head of cauliflower
1/2 yellow onion
1 cup water from pot of cauli
1/4 cup nutritional yeast
5 cloves garlic
1/2 lemon
1 tablespoon olive oil
Salt and pep to taste
Grilled chicken if you want to add
INSTRUCTIONS:

1. Cut cauli into medium size pieces.
2. In a pot, boil water. Add cauli to water. Cook for 8-10 min.
3. Chop onion and garlic.
4. In a pan, on medium heat, sauté garlic and onion in olive oil. Sauté until soft and translucent.
5. With a slotted spoon, remove cauli from pot and put into a blender. (Remember you need 1 cup of the water!)
6. In a blender, blend cauli, water from cauli pot, onion and garlic. Blend.
7. Add lemon juice, nutritional yeast, salt and pep to blender. Blend.
8. Eat over fettuccini. Add grilled chicken if you want! ENJOY!
