CASHEW CHICKEN CURRY

chicken curry

INGREDIENTS:

2 tablespoon coconut oil
1/2 yellow onion (diced)
3 cloves minced garlic 
2 tablespoon minced ginger 
2 teaspoon curry powder 
1 (11 oz) Thai Red Curry Sauce 
1 red bell pepper (sliced)
2 chicken breast (sliced into 1 inch slices) 
2 teaspoon pink salt 
1/2 teaspoon pepper
1 (13.5 fl oz) can full fat coconut milk
1 tablespoon coconut sugar (you can sub with brown sugar) 
1/4 cup halved cashews (optional)
Cilantro for taste 
Eat with basmati rice or brown rice or naan, etc. .

INSTRUCTIONS:


1. Dice onion, mince garlic, mince ginger. Slice red bell pepper. 
2. In a large deep skillet over medium heat, add coconut oil and onion. Sauté for 4 min or until onions are golden brown. Add garlic and ginger. Stir. Turn heat to low and add curry powder and red curry sauce. Stir often for 2 min. 
3. Turn heat back up to medium high. Add bell pepper. Stir often for 2 min. Add chicken, salt and pep. Cook for 5 min. 
4. Add coconut milk, coconut sugar, and cashews. Stir. Cook until chicken is cooked. 
5. Add cilantro for topping.
