DOUBLE CHOC MUFFINS

INGREDIENTS:


2 3/4 cup oats
1 cup dairy free chocolate chips
1 cup plain yogurt (dairy free I used @kitehillfoods)
1/4 cup pure maple syrup
1/2 cup nut milk (I used cashew)
1/2 cup cocoa powder
2 Tbsp Apple cider vinegar
1 Tbsp baking powder
1 tsp baking soda
1 tsp vanilla
1/8 tsp pink Himalayan salt

INSTRUCTIONS:

1. Preheat oven to 350F.

2. Make oat flour- In a blender, blend oats until you get a flour-like consistency.

3. Combine oat flour, cocoa powder, baking powder, baking soda, and salt. Stir.

4. Add nut milk, apple cider vinegar, maple syrup, yogurt, and vanilla. Stir until smooth.

5. Add chocolate chips. Stir.6. Lightly oil muffin tins and scoop mixture evenly into tins. (One batch should make 12 muffins.)

7. Bake for 24 minutes. ENJOY!
