THAI CHICKEN NOODLES

PREP TIME: 15 min

Makes 4 servings 

INGREDIENTS:

​

Salad

4 zucchinis (for noodles)

4 cups kale chopped

1 small red bell pepper julienned

1 small yellow bell pepper juienned

1 cup fresh cilantro leaves chopped

2 cups cooked chicken breast cubes

1/2 cup roasted cashews

​

Sauce

1/4 cup sesame oil

2-3 tablespoons almond butter/peanut butter

2 1/2 tablespoons coconut aminos

2 tablespoons distilled white vinegar

1 1/2 tablespoon date syrup/maple syrup

1 tablespoon lime juice

1 medium garlic clove

INSTRUCTIONS:

​

1.  Chop kale, bell peppers,  and cilantro leaves. 

2.  In a blender or food processor puree all the ingredients for the sauce until creamy and smooth.

3.  ​In a large bowl add the noodles, chicken, chopped ingredients and sauce.  Top with cashews, sesame seeds, more cilantro (if you desire), etc.  ENJOY!​
