 WHITE CHICKEN CHILI

INGREDIENTS:

​

2-3 chicken breasts

1 (8 oz) package cream cheese (I use dairy free)

1 (14.5 oz) can chicken broth

1 (11 oz) can corn, drained

1 (15.5 oz) can black beans, drained and rinsed

1 (15.5 oz) can cannelloni or white beans, drained and rinsed

1 (10 oz) can diced tomatoes

1 (4 oz) can green chilies

1 Tbsp chili powder

1 tsp onion powder

1 tsp cumin

Salt and pep to taste

INSTRUCTIONS:

​

1. Add chicken, corn, black beans, diced tomatoes, green chilies, chicken broth, and seasonings to slow cooker. Stir.

​

2. Cover and cook on high for 4-6 hours.

​

3. Remove chicken from slow cooker and shred.

 

4. Add cream cheese to slow cooker and whisk until combined. Return chicken to slow cooker.

ENJOY!

No toppings necessary. But top with additional cheese and or your favorite hot sauce if you desire!
