    ISLAND TACOS PREP TIME: 20 min COOK TIME: 8 min Make 4 servings ​ INGREDIENTS: ​ 1 pound 97% lean ground beef 2 tablespoon chili lime seasoning blend (Trader Joes) ​ Sauce: 1 mango 1 avocado 1/2 red bell pepper 1/2 jalapeno pepper 1 lime 1/4 cup cilantro salt and pepper to taste ​ Toppings: 3/4 cup fresh pineapple chunks cilantro 1 diced tomato lime juice salt and pepper to taste ​ Other Ingredients: 1 cup purple cabbage shredded tortillas of choice (I use corn) INSTRUCTIONS: ​ 1. Brown ground beef with chile lime seasoning in a pan, stirring occasionally until fully cooked. (Should take about 8-10 min.) 2. Blend all sauce ingredients in food processor or Vitamix. 3. Prepare tacos by adding shredded cabbage, ground beef into a tortilla. Add fresh lime, tomato and pineapple chunks on top for that additional island flavor!     KALE CHIPS INGREDIENTS: ​ 1 Bunch of Kale 1 Tablespoon Olive oil 1 1/5 Tablespoon Nutritional Yeast (gives a cheesy flavor. Also rich in vitamin B.) 1 teaspoon garlic powder 1/2 teaspoon Onion Powder 1 teaspoon Cayenne Pepper 1/2 teaspoon Chili Powder 1/2 teaspoon Pink Himalayan Salt (or normal salt) ​ INSTRUCTIONS: ​ 1. Preheat oven to 275 degrees F. Massage kale in olive oil and other seasonings. ​ 2. Bake for 25 min (or until crispy) turning leaves halfway through.     VEGAN CHOCOLATE CHIP COOKIES INGREDIENTS: 1 1/4 cup almond flour 1/2 cup coconut sugar 1/2 cup almond butter or preferred nut butter 1/3 cup choc chips 3 tablespoon water Pinch of salt Makes about 8-10 cookies. INSTRUCTIONS: 1. Preheat oven to 375. 2. Combine ALL ingredients into a bowl. Stir well. 3. Roll a spoonful size of dough into a ball. Flatten down with a fork on a cookie sheet.     SAUSAGE EGG CASSEROLE INGREDIENTS: 1 lb Italian sausage or ground turkey 12 eggs 1 cup spinach 1 small sweet potato Salt and pep for taste INSTRUCTIONS: 1. Preheat oven to 375. 2. Brown the meat on a sauce pan on medium heat. 3. Cut sweet potato into cubes. 4. Scramble eggs. 5. Combine all ingredients into a 9 x 9 dish. Stir. 6. Bake for 45 min.     CARAMELIZED BANANA OATS INGREDIENTS: ​ 1 cup rolled oats 1/2 cup cashew milk 1 banana 1 tablespoon almond butter or peanut butter handful of blueberries 1 tablespoon coconut shavings ​ INSTRUCTIONS: 1. Over the stove heat up 1/2 cup of cashew milk. 2. Stir in the rolled oats. Mix in cinnamon. 3. Oats will start to thicken. Transfer to breakfast bowl. 4. Slice a banana length-wise. Drizzle honey and sprinkle cinnamon on top of banana. Cook bananas on the stove top to caramelize. About 5 min. 4. Top with blueberries, coconut shavings, almond butter and caramelized banana.     CASHEW CHICKEN CURRY INGREDIENTS: ​ 2 tablespoon coconut oil 1/2 yellow onion (diced) 3 cloves minced garlic 2 tablespoon minced ginger 2 teaspoon curry powder 1 (11 oz) Thai Red Curry Sauce 1 red bell pepper (sliced) 2 chicken breast (sliced into 1 inch slices) 2 teaspoon pink salt 1/2 teaspoon pepper 1 (13.5 fl oz) can full fat coconut milk 1 tablespoon coconut sugar (you can sub with brown sugar) 1/4 cup halved cashews (optional) Cilantro for taste Eat with basmati rice or brown rice or naan, etc. . INSTRUCTIONS: 1. Dice onion, mince garlic, mince ginger. Slice red bell pepper. 2. In a large deep skillet over medium heat, add coconut oil and onion. Sauté for 4 min or until onions are golden brown. Add garlic and ginger. Stir. Turn heat to low and add curry powder and red curry sauce. Stir often for 2 min. 3. Turn heat back up to medium high. Add bell pepper. Stir often for 2 min. Add chicken, salt and pep. Cook for 5 min. 4. Add coconut milk, coconut sugar, and cashews. Stir. Cook until chicken is cooked. 5. Add cilantro for topping. 6.     PB CHOC NICE CREAM INGREDIENTS: 3 frozen banana (best if chopped before you freeze them) 1-2 tablespoon cocoa powder 1 tablespoon Natural pb As many Choc chips as you want. INSTRUCTIONS: 1. In a high speed blender (I use a @vitamix ) blend frozen bananas. You’ll need to use your vitamix tamper to mash and mix. I don’t add any liquid. 2. Once blended add cocoa powder and blend. 3. Then add realllll pb and blend a little to help the swirls get all throughout your ice cream. 4. Add melted chocolate sauce and or choc chips.
